Hungarian roll - sponge cake

 


This is sort of traditional. Sort of because it is usually filled with apricot jam and has powdered sugar on top. Mine is filled with spicy plum jam I made this summer, no more sugar needed to be honest. 

If you have a powerful stand mixer, just put 4 eggs in the bowl and beat them until they are almost white and add 4 tablespoon sugar.

If you do not, separate the yolks and white, and beat the whites hard, and follow with the yolks. Add 4 tablespoon sugar. Fold in the whites.

Now, add 4 tablespoon flour and 2 tablespoon cornstarch. You can add vanilla to flavor. 

Spread it out on a baking sheet covered cookie sheet, and bake on 180 C / 350 F 8 minutes. Until still warm, roll it up using a hand towel, and cover, until slightly cool. Then unroll, remove the baking sheet carefully, roll it up again, covered, let it cool completely. 

Unroll, spread the jam on, roll, cut and serve.
